Holland America Line and Chef Masaharu Morimoto are rolling out a refreshed Morimoto by Sea menu this month, ahead of the chef’s own appearance aboard Nieuw Amsterdam’s May 8, 2027, Alaska sailing. Holdovers include Pork Gyoza, Taco Two Ways, Sticky Ribs, Japanese Curry and the Morimoto Buri-Bop, which the chef has been serving since his “Iron Chef Japan” days.





Nothing here reads like a menu chasing trends for their own sake. It’s Morimoto adding to a formula that already worked, which tracks with what I remember eating: dishes that felt considered rather than assembled to hit a theme.
